#FoodieFriday: CBD Mashed Avocado Toast with Poached Egg

#FoodieFriday! Today we're sharing a perfect recipe for your toast, with a twist!
Today's recipe: CBD Mashed Avocado Toast with Poached Egg
 
Ingredients
  • 1 slice rustic sourdough bread
  • 1 ripe avocado
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon chili flakes
  • 1/4 cup microgreens or sprouts
  • 1/4 teaspoon of a Golden Drop CBD Oil
  • Flaky sea salt, for finishing
  • 1 Organic Egg
Instructions:
STEP 1
Bring a small pot of water to a simmer. Crack egg into a small dish or ramekin. Using a spoon, stir the water in pot vigorously to create a vortex, then gently slide egg into the center of it. Cook until the white is just barely set but yolk is still quite soft and runny.
STEP 2
Using a slotted spoon, carefully remove poached egg from water and set on a plate while you make the toast.
STEP 3
In a toaster or heavy-bottomed skillet set over medium heat, toast bread until golden brown.
STEP 4
Cut avocado in half and remove pit. Scoop avocado into a small bowl, add lemon juice, and mash. Spread a generous layer of mashed avocado over toast, then drizzle coconut oil over the top. Sprinkle chili flakes and flaky sea salt over avocado.
STEP 5
To finish, gently slide poached egg onto the toast and garnish with the microgreens or sprouts.
